Milagu Sadam Recipe (Instant Pepper Rice)

I consider the variety in rice dishes is a blessing! When you are in a hurry to cook up a meal or too lazy to make an elaborate meal, the variety of rice dishes come handy. Not just that, variety rice recipes works fantastic for left over rice. I can safely call it instant rice dish( all you need is left over rice to be ready in hand). Among all the variety rice recipes, Milagu Sadam or Instant pepper rice is the most simplest. It’s a straight forward dish which uses minimal, common ingredients from your pantry.

Serve Milagu Sadam with Tomato Onion Cucumber Raita or Boondi Raita for a light and delicious weekday meal.

Ingredients

  • 1 cup Basmati rice , cooked
  • 1 Onion , finely chopped
  • 2-1/2 tablespoons Whole Black Peppercorns , freshly ground
  • 2 sprig Curry leaves
  • 1 teaspoon Mustard seeds (Rai/ Kadugu)
  • 1-1/2 teaspoon White Urad Dal (Split)
  • 10 Cashew nuts
  • 2 teaspoons Oil
  • Salt , to taste

Directions for Milagu Sadam Recipe (Instant Pepper Rice)

  1. To begin making the Milagu Sadam, heat oil in a heavy bottomed pan.

  2. Add mustard seeds and wait till they crackle. Add urad dal and sauté till dal begins to turn brown.

  3. Add finely chopped onions and curry leaves. Saute till the onions turn translucent.

  4. Once it is done, add the cashew nuts in the pan.

  5. Add freshly ground pepper powder and salt to taste. Mix well and let it cook for a minute or 2 minutes.

  6. Add cooked basmati rice and gently toss it to coat the rice well with the pepper-onion mix. Check for seasoning, add more salt if needed.

  7. Turn off flame and serve immediately. Serve Milagu Sadam with Tomato Onion Cucumber Raita or Boondi Raita for a light and delicious weekday meal.
