To begin making the Aratikaya Tomato Koora Recipe (Andhra Style Plantains Cooked with Tomato), peel the outer skin of the plantains, chop them into small cubes and place it in a bowl of water to avoid discolouration until cooking.
Heat oil in a heavy bottomed pan, add the mustard seeds, cumin seeds, urad dal and let it crackle.
Add the asafoetida, curry leaves and let it splutter. Add the chopped onion and saute until translucent.
Add the grated ginger, green chilli, turmeric powder, red chilli powder and saute until the raw flavour of the ginger goes away.
Now, drain the water from the plantains and add it to the pan. Season with salt, mix well and cover with a lid to cook for 10 minutes.
Now, add the chopped tomatoes and mix well. Sprinkle a little water and leave it to cook further for another 5 minutes with the lid on.
