Punjabi cuisine is the famous cuisine all over India. A combination of cottage cheese, potatoes and cream, the cottage cheese and potato balls are made called koftas. They are dipped in a red creamy gravy which is purely divine in taste. This recipe is for all those who want to make a rich gravy which is easy to make and takes less time to prepare.

    Ingredients for kofta
  • 3 Potatoes (Aloo) , boiled and mashed
  • 1 cup Paneer (Homemade Cottage Cheese) , grated
  • 2 tablespoons Fresh cream
  • 1 Green Chilli , finely chopped
  • 1 teaspoon Garam masala powder
  • 1 teaspoon Red Chilli powder
  • 1 teaspoon Cumin powder (Jeera)
  • 2 tablespoons Coriander (Dhania) Leaves , chopped
  • 2 tablespoons Corn flour
  • Salt , as required
  • Ingredients for gravy
  • 2 Onions
  • 8 to 10 cloves Garlic
  • 1 inch Ginger
  • 2 Green Chillies
  • 10 to 12 Cashew nuts
  • 3 Tomatoes , pureed
  • 1 teaspoon Red Chilli powder
  • 1-1/2 teaspoon Coriander Powder (Dhania)
  • 1 teaspoon Garam masala powder
  • 1 inch Cinnamon Stick (Dalchini)
  • 1 Bay leaf (tej patta)
  • 1 teaspoon Cumin seeds (Jeera)
  • 2 to 3 Cloves (Laung)
  • 1 teaspoon Sugar
  • 3 to 4 tablespoons Fresh cream
  • 2 teaspoon Kasuri Methi (Dried Fenugreek Leaves)
  • Sunflower Oil , as required

How to make Malai Kofta Recipe -Cottage Cheese & Potato Balls In Creamy Red Gravy

  1. To begin making the Malai Kofta recipe, firstly mix all the ingredients mentioned under ‘for koftas’ in a mixing bowl.

  2. Make small balls of the potato and paneer mixture and fry it (you can even also shallow fry it). Use a Kuzhi Paniyaram Pan to make the koftas as it is healthier.

  3. Take onions, cashew nuts, ginger, garlic and green chillies and grind it in mixer grinder into a smooth paste.

  4. Heat oil in a heavy bottomed pan and add cloves, cinnamon, bay leaf.

  5. Add the cashew and onion mixture in the pan and make the kofta curry.

  6. When the onion turns translucent and light brown, add all the dry spices and saute them for 2 minutes.

  7. Add tomatoes, kasuri methi and let it cook for 5 more minutes.

  8. After 5 minutes, add 2 cups of water and lastly add fresh cream and put the koftas in it. Simmer Malai Kofta for 2 more minutes and then garnish with fresh cream.

  9. Serve Malai Kofta along with Butter Garlic Naan orJeera Rice for a perfect weekday meal.
