Ingredients

  • 1 Snake gourd (pudulangai) , cut into small pieces with skin
  • 2 teaspoon Chana dal (Bengal Gram Dal)
  • 2 teaspoon White Urad Dal (Split)
  • 2 teaspoon Sesame seeds (Til seeds)
  • 1/2 teaspoon Cumin seeds (Jeera)
  • 1 inch Ginger , grated
  • 1 cup Tamarind Water
  • 3 Green Chillies , sliced
  • Salt , to taste
  • 1/8 teaspoon Turmeric powder (Haldi)
  • For seasonings
  • Pinch hing
  • 1/4 teaspoon Cumin seeds (Jeera)
  • 1/4 teaspoon Mustard seeds (Rai/ Kadugu)
  • 1 Red Chilli powder , broken
  • 1/2 teaspoon White Urad Dal (Split)
  • 2 cloves Garlic , crushed
  • 1 sprig Curry leaves

  1. We begin making the Pudalangai Thogayal Recipe (Snake Gourd Chutney Recipe) by heating a kadai, add oil and crackle the urad dal, channa dal, sesame seeds and cumin seeds. Sauté for few minutes.

  2. Then add in the cut snake gourd, chilies and ginger. Sauté till the bottle gourd gets cooked. Once done add the tamarind water and salt. Keep cooking till the water reduces and thickens.

  3. Once done, let it cool down and grind it into a smooth paste in the mixer. Keep it aside.
