The Asian Vegetable Noodle Salad is a simple and quick recipe that makes a quick weeknight dinner along with a warm soup. This recipe is inspired by a dish that my friend had brought over for a potluck party. The theme was Indian Chinese and this salad went so well along with the Vegetable Manchurian Balls in Chilli Garlic Sauce and the Chinese Noodles. Ingredients

  • 250 grams Veg Hakka Noodles , (or 1 pack)
  • 1 tablespoon Sesame (Gingelly) Oil
  • 2 tablespoons Rice Vinegar , or chilli vinegar
  • 1 tablespoon Soy sauce
  • 1 tablespoon Red Chilli sauce
  • 1 Carrot (Gajjar) , thinly sliced or julienned
  • 1/2 cup Cabbage (Patta Gobi/ Muttaikose) , thinly sliced
  • 5 Spring Onion (Bulb & Greens) , bottom white root part, thinly sliced
  • 1/2 Red Bell pepper (Capsicum) , or green bell pepper, thinly sliced or julienned
  • 1/4 cup Bean Sprouts , (optional)
  • 4 tablespoons Roasted Peanuts (Moongphali) , for garnish

How to make Cold Asian Noodle Salad Flavoured With Peanuts And Sesame

  1. To begin making Asian Style Vegetable Noodle Salad In a sauce pan; cook the hakka noodles according to the package instruction with a bit of salt. Once cooked, rinse the noodles under ice cold water to prevent more cooking.

  2. Drain the hakka noodles, drizzle a teaspoon of sesame oil to prevent the noodles from sticking to each other.

  3. In a small mixing bowl, combine the sesame oil, vinegar, soy sauce and chilli sauce. Fork it well to make a good dressing for the Noodle Salad.

  4. Add in a large mixing bowl, add in the cooked noodles and pour the dressing over. Stir to combine well. Add in the vegetables and peanuts and toss Vegetable Noodle Salad further.
