  • 250 grams Chicken , cut into pieces with bones
  • For marination
  • 2 tablespoons Yogurt (Curd)
  • Salt , as per required
  • 1 teaspoon Turmeric powder (Haldi)
  • 1 tablespoon Red chilli powder
  • For masala
  • 2 tablespoons Ghee
  • 6 cloves Garlic
  • 1 Onion , long cut
  • 1 Tomato , deseeded (long cut)
  • 6 Whole Black Pepper Corns
  • 4 Cloves
  • 1 inch Cinnamon Stick
  • 2 tablespoons Cumin seeds
  • 2 tablespoons Coriander seeds
  • 4 Byadagi Dried Chillies
  • 20 grams Tamarind
  • 2 tablespoons Fresh coconut , grated
  • Additional
  • 2 sprig Curry leaves
  • 1/2 teaspoon Sugar
  • 2 tablespoons Ghee
  • 2 sprig Coriander leaves (Dhania) , chopped

Directions for Chicken Ghee Roast Recipe

  1. To begin making the Chicken Ghee Roast, firstly wash the chicken pieces thoroughly.

  2. Add all the spices mentioned under marination to the chicken pieces. Mix well and keep them aside.

  3. In a medium skillet, add ghee. When its hot add all the spices mentioned under masala.

  4. Fry them on the medium flame till it leaves a nice aroma. Let it cool and grind it to a smooth paste.

  5. In the same skillet, add ghee. When its hot add curry leaves.

  6. When the curry leaves splutter, add the ground masala. Let it cook till it leaves the sides of pan.

  7. Now add the chicken pieces. Add very little water, adjust salt and sugar. Mix well.

  8. Cover and let it cook till the chicken is cooked well and the gravy is very minimal.

  9. Now garnish with cilantro and it is ready to be served.

  10. Serve Chicken Ghee Roast with steamed rice or whole wheat lachha parathas. You can also serve it as an appetiser.
