Heal oil in a pan over medium heat; add the mustard seeds and cumin seeds. Allow them to crackle. Add the hing, green chillies, turmeric powder and the raw grated papaya along with salt.
Stir fry until the papaya softens just a bit. Once done, turn off the heat and transfer the papitha nu sambharo to a bowl and serve.
