Biryani ! A lot of us just read/hear/say the word and our mouth begins to water. A rice reparation that needs no introduction. A biryani like we all know, is made by putting together cooked rice in layers along with cooked masaledar vegetables or meat. It is a staple across the Indian continent, and each region has its own speciality. 

Biryanis are made in various styles depending on the region it is made in, from dum biryani, to ambur biryani, hyderabadi biryani to dindigul biryani the list really is endless. Not to miss out the Chettinad and the Malabar versions. 

The biryani is a meal in itself. Served usually with a raita, or gravy by the side, like a salan that tastes great with the meal. Pickled onions and cut cucumbers as well are served along with the biryani meal. Most often, in many households, biryani is a special weekend meal made on Sunday afternoons for lunch. 

 Made usually with whole spices like bay leaf, cloves, cinnamon, peppercorns, stone flower, star anise, these spices lend a strong aroma to the biryani. When I'm hungry, the first thing that comes to my mind is a biryani that is spicy, packed with flavours and succulent pieces of potatoes or meat, that will simply leave me satisfied.
