Ingredients

    For the Stuffing
  • 1 teaspoon Cooking oil
  • 4 cloves Garlic
  • 1 Onion , thinly sliced
  • 1 Green Bell Pepper (Capsicum) , thinly sliced
  • 1 Carrot (Gajjar) , julienned
  • 100 grams Baby corn , cut length wise
  • Salt , to taste
  • 200 grams Paneer (Homemade Cottage Cheese) , cut into strips
  • 1 teaspoon Chaat Masala Powder
  • 1 tablespoon Nutralite Achari Mayo
  • For the Kathi Roll
  • 4 Whole Wheat Tawa Paratha , or tortilla made into round large sizes for rolls
  • 1 Cucumber , cut length wise
  • 1 Tomato , cut length wise
  • 4 tablespoons Nutralite Achari Mayo

How to make Baby Corn And Paneer Kathi Roll Recipe

  1. To begin making the Baby Corn And Paneer Kathi Roll Recipe prep all the ingredients and keep them ready.

  2. Make the whole wheat paratha according to the Tawa Paratha Recipe; cook the parathas in ghee or oil and keep aside.

  3. Heat oil in a saucepan over medium heat; add the onion, garlic and saute until the onions are well roasted.

  4. Once well roasted, add the bell peppers, carrots and baby corn.

  5. Saute them well till the vegetables turn soft and tender.

  6. Once tender, add the cut paneer pieces, the Nutralite Achari Mayo and toss until well coated. Avoid over cooking the paneer at this stage as it can make the paneer rubbery.

  7. Place the tawa paratha over a flat surface.

  8. Place a portion of the baby corn paneer filling in towards the centre, spread the cucumber and tomatoes and some extra Achari Mayo and roll it up.
