Ingredients

    For the Coconut Curry Sauce:
  • 1 tablespoon Cooking oil
  • 2 Shallots
  • 1 tablespoon Ginger , minced
  • 2 tablespoons Thai Red Curry Paste
  • 1 1/2 cup Coconut milk
  • 3 tablespoons Sugar
  • 1 tablespoon Red Chilli sauce
  • 2 tablespoons Soy sauce
  • For the Bowls
  • 2 cups Rice Noodles (Flat)
  • 1 tablespoon Cooking oil
  • 1 Onion , chopped
  • 1 cup Broccoli , chopped into florets
  • 1 cup Carrots (Gajjar) , shredded
  • 1/2 Green zucchini , julienned
  • Lemon , for serving
  • 2 sprig Basil leaves , for serving

How to make Bangkok Coconut Curry Noodle Bowl Recipe

  1. We begin making the Bangkok Coconut Curry Noodle Bowl Recipe by soaking the noodles in cold water for about 20 minutes till it becomes soft and drain the water.

  2. For the sauce heat oil in a sauce pan, saute the onions and ginger for few minutes and then add the red curry paste and coconut milk and the rest of the seasonings and sauces, stir well till it forms a nice curry.

  3. You can add little water to make it thin and adjust according to your consistency. Check for salt.

  4. Heat another sauce pan with oil and saute the broccoli, bell peppers and carrot for few minutes till it is cooked and becomes soft.

  5. Add the noodles and toss it around in the pan for some time. At this point add the sauce and stir in well. Do not overcook it otherwise the noodles will become sticky.
