Bendakaya Pulusu is an Andhra Style tangy and spicy tamarind based gravy prepared with ladies finger/okra. The tanginess from the tamarind, the spice from the red chillies and sweetness from the jaggery makes for a perfect balance of flavours. Pulusu is similar to Tamil Nadu Kuzhambu which is also prepared with a tamarind and jaggery gravy.

Ingredients

  • 250 grams Bhindi (Lady Finger/Okra) , cut into 1 inch pieces
  • 1 Onion , finely chopped
  • 1 Tomato , finely chopped
  • 4 Dry red chillies
  • 20 grams Tamarind
  • 1 sprig Curry leaves
  • 1/2 teaspoon Mustard seeds
  • 1/2 teaspoon Cumin (Jeera) seeds
  • 1/2 teaspoon Methi Seeds (Fenugreek Seeds)
  • 1/4 teaspoon Turmeric powder (Haldi)
  • 1/2 teaspoon Red chilli powder
  • 1/2 teaspoon Coriander (Dhania) Powder
  • Asafoetida (hing) , a pinch
  • 1/2 teaspoon Jaggery
  • 2 teaspoons Cooking oil
  • Salt , as per your taste
  • Coriander (Dhania) Leaves , for garnish

How to make Bendakaya Pulusu Recipe - Andhra Style Ladies Finger In Tamarind Gravy

  1. To begin making Andhra Style Bendakaya Pulusu, soak tamarind in hot water for 20 minutes and extract the pulp.

  2. Heat a pan, with two teaspoons of oi on medium-low flame, once the oil is hot, add mustard seeds, cumin seeds and fenugreek seeds. Allow it to crackle. Make sure the flame is on low. 

  3. Add in chopped onion and red chilies to it. Saute until the onion are translucent.

  4. Next add Ladies Finger/Okra/Bendakaya pieces and saute well in medium flame until it changes color and becomes non sticky. This will take about 2 to 3 minutes.

  5. Add tomatoes and saute until they turn mushy. Now add turmeric powder, chilli powder and coriander powder. Mix together and saute for 2-3 minutes until raw smell of the spice powders go away.

  6. Simmer the flame, pour the tamarind juice and add required amount of salt as per your taste. Mix and bring to boil.

  7. Add a little water if needed and boil until ladies finger/okra/bendakaya gets well cooked. 

  8. Add jaggery and mix well until the jaggery dissolves. Switch off the flame and garnish with Coriander leaves. Andhra Bendakaya Pulusu is ready to be served.

  9. Serve Andhra Style Bendakaya Pulusu along with Steamed Rice, Andhra Style Palakaru Vepadu, Moong Sprouts Salad with Grated Carrots and Cucumber and Curd for a complete Andhra Style meal.
