    1 Yellow Bell Pepper (Capsicum), thinly sliced
    1 Pickled Jalapenos, deseeded
    1 tablespoon Extra Virgin Olive Oil

    1 cup Mozzarella cheese, grated
    4 Tortillas, or corn tortillas
