To begin making the Cauliflower Thoran Recipe, first heat the oil in a heavy bottomed pan.
Add the mustard seeds and once they splutter add the cumin seeds and the urad dal and allow them to crackle until the dal turns golden brown.
Add the onions and green chillies along with the curry leaves and sauté for a few seconds or till they becomes soft.
Next, add the turmeric powder and the chopped cauliflower florets.
Sprinkle salt and cook covered till the cauliflower just becomes soft. Add a splash of water if it sticks to the vessel.
Finally once the cauliflower is cooked the coconut and stir well to combine.
Cook Cauliflower Thoran for 1 to 2 minutes until the flavours come through.
Check the salt and spices and adjust to taste accordingly.
Turn off the heat and transfer the Cauliflower Thoran to a serving bowl and serve hot.
