  • 1 cup Kala Chana (Brown Chickpeas) , soaked overnight
  • 2 Ridge Gourd (Turai/ Peerkangai) , peeled and sliced
  • 1 tablespoon Mustard oil
  • 1 teaspoon Cumin seeds (Jeera)
  • 1/4 teaspoon Methi Seeds (Fenugreek Seeds)
  • 1 pinch Asafoetida (hing)
  • 1 Onion , thinly sliced
  • 1 inch Ginger , finely chopped
  • 4 cloves Garlic , finely chopped
  • 2 Green Chilli , finely chopped
  • 2 Tomatoes , finely chopped
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Red Chilli powder
  • 1 teaspoon Coriander Powder (Dhania)
  • 1/2 teaspoon Garam masala powder
  • Salt , to taste
  • 5 sprig Coriander (Dhania) Leaves , finely chopped

How to make Chana Turai Sabzi Recipe | Ridge Gourd with Black Chana | Nenua Chana Sabzi

  1. We begin making the Chana Turai/Nenua Chana Sabzi Recipe (Ridge Gourd with Black Chana Recipe) first prep all the ingredients and keep ready.

  2. Soak the kala channa in water overnight.

  3. Drain the soaked black chickpeas and pressure cook them with 2 cups of water and a pinch of salt for 4-5 whistles and then turn the heat to low and simmer for another 15 minutes until they are tender.

  4. Once done, turn off the pressure cooker and allow the pressure to release naturally. Keep aside. 

  5. Peel and chop the ridge gourds into small pieces or thin slices. Keep them aside.

  6. Heat oil in a large pan or kadai over medium heat. Add cumin seeds and methi seeds and allow it to splutter.

  7. Add the finely chopped onions, ginger, garlic and green chillies and sauté until the onions soften.Add the chopped tomatoes and cook until they turn soft and mushy. Add turmeric powder, coriander powder, red chilli powder, garam masala powder and salt. Mix well and cook for a couple of minutes until the spices are well combined with the tomatoes.

  8. Add the chopped ridge gourd (turai/nenua) to the pan. Mix well to coat the gourd with the spice mixture. Cover and cook for about 5-7 minutes or until the ridge gourd becomes tender, stirring occasionally.

  9. Once the ridge gourd is cooked, add the cooked black chickpeas (kala chana) to the pan. Mix everything together and cook for another 5 minutes, allowing the flavors to meld. Check the salt and adjust to taste.

  10. Turn off the heat and garnish the Chana Turai Sabzi with freshly chopped coriander leaves and transfter to a serving bowl
