Chicken Cheese Stuffed Kulcha Recipe is a delicious kulcha. Chicken keema, cooked along with dry spice powders and then combined with cheese and stuffed in a kulcha dough. 

The kulcha dough is made using whole wheat flour and all purpose flour, yeast and yogurt, that help with its texture, making them soft as well.

Ingredients

    For the Chicken Cheese filling
  • 250 grams Chicken , minced
  • 1 tablespoon Cooking oil
  • 2 cloves Garlic , finely chopped
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Cumin (Jeera) powder
  • 1 teaspoon Black pepper powder
  • 1/3 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Garam masala powder
  • 1/2 cup Cheese , grated
  • 1 teaspoon Coriander (Dhania) Powder
  • For the kulcha dough
  • 1/2 cup Whole Wheat Flour
  • 1/2 teaspoon Active dry yeast
  • 1/2 cup All Purpose Flour (Maida)
  • 1 tablespoon Curd (Dahi / Yogurt)
  • 1 teaspoon Sugar
  • Salt , to taste
  • Water , to knead the dough
  • 1 tablespoon Butter
  • Other Ingredients
  • 1 Butter
  • 1 tablespoon Kalonji (Onion Nigella Seeds)
  • Butter , to cook the kulchas
  • 1/4 cup Coriander (Dhania) Leaves , finely chopped

How to make Chicken Cheese Stuffed Kulcha Recipe

  1. To begin making the Chicken Cheese Stuffed Kulcha Recipe, we will first make the dough. 

To make the dough for the Chicken Cheese Stuffed Kulcha
  1. In a mixing bowl, combine the whole wheat flour, all purpose flour, yeast, curd, sugar, salt,  butter with your fingers. 

  2. Next add water, little by little to knead the dough. We are looking for a smooth soft dough. Bring the kulcha dough together and smoothen with a few drops of cooking oil. 

  3. Cover this bowl with a damp cloth and rest it in a warm place for about 30-40 minutes or until the yeast has grown and the dough has doubled in size. 

To make the filling for the Chicken Cheese Stuffed Kulcha
  1. In a pan heat oil on medium flame, to this add, the garlic and saute for 30 seconds. 

  2. Next add all the dry masalas, red chilli powder, cumin powder, black pepper powder, turmeric powder, garam masala powder, coriander powder and salt. 

  3. At this stage add the minced chicken and cook until the chicken has fully cooked through. This will take a good 12-15 minutes. 

  4. Once cooked, transfer to a bowl and allow it to cool. Once the chicken mince has cooled, mix in the grated cheese. 

To Cook the Chicken Cheese Stuffed Kulcha
  1. Preheat the tawa on medium flame.

  2. Remove the dough from the warm place, punch the dough back with your knuckles. 

  3. Now divide the dough into equal portions of lemon ball sizes, dust in flour and flatten them using a rolling pin to about 2 inch diameter. 

  4. Now place a tablespoon or two of the chicken cheese filling in the center, and bring the edges of the chicken cheese kulcha together in the center.

  5. Flatten the kulcha between your palms, dust in flour. 

  6. Roll them out to a slightly elongated shaped kulchas, now sprinkle a few drops of water and stick a few coriander leaves and kalonji seeds in there. 

  7. Place the water side of the chicken cheese kulcha face down on the greased tawa which has been preheating. 

  8. Cook for about a minute before you flip and cook on the other side. 

  9. Slather butter generously on both sides of the Chicken Cheese Kulcha and flip and cook on both sides until the kulcha is golden brown and lightly crisp on both sides. 

  10. Repeat the same for the remaining dough and make the Chicken Cheese Kulchas the similar way.
