Talk about Gujarat and the first thing that comes to our mind is their sumptuous food. Snacks and farsan as they call it. Gujarati cuisine though is entirely vegetarian and uses little or no onion and garlic. One of the most common snacks of the Gujaratis are the Dhoklas that we can't really miss.
Dhoklas are made by making a batter, which is made of besan or gram flour or sometimes, soaked dals are ground to make the base of the batter as well.
The batter is placed in greased plates and then steamed in a steamer. The the dhoklas are well steamed and then demoulded. Cut into squares and served with a crispy crunchy tadka of mustard seeds, cumin seeds and curry leaves, often finished off with fresh coriander leaves.
The base of the dhoklas can be anything from besan to dals, rava, to water chestnut flour, to millets, oats, buckwheat. These dhoklas turn out soft and spongy with air pockets, as there's fruit salt include in the batter. These dhoklas can literally be eaten at any time of the day be it at breakfast, during tea time, or just as a snack as well.
Generally served with Green Chutney and Date Tamarind Chutney.
