Pumpkins are in season. Even though pumpkins are available in the market year round, pumpkin is a winter vegetable and is a comfort food during winters.Pumpkin is so versatile that it can be used in preparation of sabzi, dals, sweets, soups, curries, desserts,pies, etc. It can be stir fried, baked, stewed and steamed.

We usually end up buying a section of the pumpkin but its best to buy whole pumpkin as it can be stored for weeks at home but pumpkin section has to be refrigerated where it can keep well for a few days. Some of us find removing the hard skin of pumpkin difficult and one of the easiest way to  do that is slice the pumpkin in half and clean it up by removing the seeds and fibrous bit of the pumpkin, cook,let cool and peel. Another way to peel a pumpkin without cooking it is using a chefs knife. Stand upright and, working from top to bottom, cut off the skin in strips with the knife, following the shape of the pumpkin. You may take off a bit more flesh than with a peeler, but the knife is much faster. 

Pumpkin is highly nutritious and versatile as a food source. Studies suggest that pumpkins can reduce the risk of cancer, regulate blood pressure, reduce blood sugar and help maintain colon health. Pumpkins are high in fiber, potassium, and vitamins A and C; their seeds are high in antioxidants, magnesium, zinc and fatty acids.Did You know that you can eat pumpkin flowers as well. The pumpkin flowers are great at treating the common cold (vitamin C), boosting male infertility (vitamin B9), ensuring eye health (vitamin A), and bone formation (phosphorus).
