Almond or Badam is a versatile nut that is used in different forms in sweet or savoury dishes. This versatile nut can be blanched and used to make salads and curries or ground to make almond meal to be used in cakes and cookies. Almonds can also be blended with water to make almond milk to make sweet badam milk or vegan hot chocolate. In India we have the popular badam halwa and badam barfi which are part of many festivities.
Choosing the right kind of almond is very important. You get two varieties. The popular and more easily available sweet almonds and then there are bitter almonds which are usually used to make essence. Old and shriveled nuts usually have an unpleasant bitter and oily taste to them. You can store almonds in the freezer in an airtight container for months.
Almonds have lots of nutrients in them, they are high in fiber, protein, healthy fats, Vitamin E, manganese and magnesium. They also contain decent amount of copper, Vitamin B2 and phosphorous. They are loaded with antioxidants which are usually stored in the skin of the almond so its a good practice to eat almonds with the skin.
