Pilaf is generally a dish that is made with rice and seasoned with enough broth to create a well-balanced flavorful dish. The rice gets a brown or golden color usually by sautéing with oil till the broth has all evaporated. Adding various seafood and meat is a specialty in Middle Eastern region but we have made it simple and vegetarian. The use of pearl onions and mushroom will create good flavors and the addition of prunes and raisins will enrich the whole dish. The whole process is made in pressure cooker to make it simpler.

The healthy element that we have added into this recipe is foxtail millet which is a type of seed grain that is coming in the recent market. It is rich in fiber, calcium and iron and is also diabetic friendly.

  • 1 cup Foxtail Millet
  • 250 grams Button mushrooms , quartered
  • 1 inch Cinnamon Stick (Dalchini)
  • 1 Cardamom (Elaichi) Pods/Seeds
  • 1 Onion , sliced
  • 4 cloves Garlic , chopped
  • 1 tablespoon Dried oregano
  • 1 tablespoon Rosemary
  • 1 teaspoon Black pepper powder
  • 1/4 teaspoon Turmeric powder (Haldi)
  • 4 Prunes , sliced
  • 1 tablespoon Sultana Raisins
  • Salt , to taste

How to make Foxtail Millet Pilaf Recipe

  1. To begin making the Foxtail Millet Pilaf Recipe, heat a pressure cooker with oil. Add cinnamon stick and cardamom pods and leave it to crackle for few seconds.

  2. Add garlic and onions and sauté until they soften and get caramelized completely.

  3. Once that is done add all the dried herbs and also salt and pepper season it well.

  4. Add raisins, prunes and honey, sauté for one last time.

  5. Add washed foxtail millet and you can add chicken stock if you would love to or you can add 2 cups of water and pressure cook for 4 whistles.
