Greek Style Revithia Sto Fourno - Chickpeas with Caramelized Onions Recipe is a tasty one pot meal when served along with pita bread or toasted bread slice. The Chickpeas are pressure cooked and then simmered in a ceramic crock pot with its own juices. The chickpeas are tossed with caramelized onions and herbs to add in extra flavor to the whole dish. The chickpea will be cooked in its own reserved liquid that was used for soaking and boiling the lentil.

Ingredients

  • 1 cup Kala Chana (Brown Chickpeas) , (soaked and boiled until tender)
  • 4 cloves Garlic , crushed
  • 1/2 cup Extra Virgin Olive Oil
  • 2 cups Water , which is the Reserved boiling liquid from chickpeas
  • 1 tablespoon Rosemary , chopped
  • 2 teaspoon Salt
  • 2 teaspoon Black pepper powder
  • 1 cup Caramelized onions

How to make Greek Style Revithia Sto Fourno - Chickpeas with Caramelized Onions Recipe

  1. To begin making the Greek Style Revithia Sto Fourno - Chickpeas with Caramelized Onions Recipe soak the chickpeas for 8 hours or overnight.

  2. Add the soaked chickpeas to a pressure cooker with the water and pressure cook for about 5 whistle. Let the pressure release naturally.

  3. Heat another ceramic crock pot with oil, add in the onions and pinch sugar to caramelize it. Keep sautéing for 15 minutes till the color of the onions changes to brown. Remove and keep it aside.

  4. In the same pan, saute the garlic, add in the boiled chickpeas, rosemary, ground pepper and salt. Pour in the reserved boiling water. Give it a stir. Check for seasoning.

  5. Sprinkle the caramelized onion on top and cook for 20 minutes till all the liquid evaporates. Sprinkle Greek Style Revithia Sto Fourno with chopped parsley and serve.
