Ingredients

  • 4 Chicken breasts
  • 2 teaspoons Olive Oil , for marinating & 2 teaspoon to cook chicken
  • 10 Lettuce leaves , roughly chopped
  • Gouda cheese , Small piece (optional)
  • 1/2 Green Bell Pepper (Capsicum) , chopped
  • 1 Cucumber , chopped
  • 8 Almonds , roasted & salted
  • 3 Cherry tomatoes , cut into half
  • Salt , to taste
  • Black pepper powder , to taste
  • 1 teaspoon Lemon juice
  • 2 cloves Garlic , grated
  • 2 sprig Parsley leaves , thoroughly chopped for marinating the chicken
  • For vinaigrette
  • 1 teaspoon Vinegar
  • 1 teaspoon Olive Oil
  • 2 sprig Parsley leaves
  • 3 cloves Garlic , grated
  • Salt , to taste
  • Red Chilli flakes , as required

Directions for Grilled Chicken Salad Recipe

  1. To begin making the Grilled Chicken Salad recipe, firstly marinate the chicken breast with salt & pepper, parsley, lime juice, 2 teaspoon olive oil and garlic. Leave it aside for almost 1 hour.

  2. Grill the chicken on a grilling pan. Add the remaining olive oil while grilling the chicken and grill it until perfectly cooked.

  3. Meanwhile, mix all the ingredients mentioned under ‘for vinaigrette’ in a mixing bowl and keep it aside.

  4. Mix the lettuce, cucumber, capsicum, tomatoes, gouda cheese, almonds and the vinaigrette.

  5. Cut the chicken making 4 pieces of each chicken breast.

  6. Plate up by arranging the bed of salad in the centre, topping the grilled chicken over the salad.

  7. Use cheddar cheese (regular cheese cubes) for garnish, if you don’t have gouda cheese.

  8. Serve Grilled Chicken Salad on its own or with The best spicy Spaghetti Bolognese for a delicious weekend dinner.
