Pumpkin Carrot Idli is a great way to add vegetables into your kids diet. You can make the idli batter and the pumpkin puree the previous night. Keep the pumpkin puree refrigerated in an airtight container. Grate the carrots and keep it refrigerated in an airtight container as well. For the Kadale Chutney grate coconut and keep it refrigerated.

Dal paratha, Curd & Mango Pickle

If you have any dal from dinner the previous night use it to make Leftover Dal Paratha. You can knead the dough for the dal paratha and keep it refrigerated the night before. Pack it with any pickle and home made curd for a wholesome meal. If you want to make the dal parathas more nutritious and add fiber to your kids diet then you can add finely chopped palak or methi leaves to the recipe as well.
