Korean Japchae Noodles is a popular Korean delicacy made from sweet potato starch noodles unlike the other noodles which is made from wheat or rice.Sweet potato is a healthier option compared to other noodles as it is rich in fiber and lesser carbs.

Korean Japchae Noodles typically has some meat such as beef, pork or chicken. Here is a vegetarian version of Japchae which has some nutritious vegetables like bell peppers, spinach, baby corn and carrots. 

Korean Japchae Noodles makes for a wholesome meal and can be cooked quickly for a weeknight dinner.

Ingredients

    200 grams Korean Sweet Potato Noodles , Substitute it with rice noodles if it is not available
    1 Onion , thinly sliced
    1 Carrot (Gajjar) , thinly sliced
    1+1/2 Red Yellow and Green Bell Peppers (Capsicum) , 1/2 each, julienned
    3 Baby corn , julienned
    1/4 cup Spinach Leaves (Palak)
    4 cloves Garlic , minced
    1 inch Ginger , grated
    2 tablespoon Sesame (Gingelly) Oil
    1/2 teaspoon Soy sauce
    Salt , as required
    1 teaspoon Sesame seeds (Til seeds) , toasted

Instructions for Korean Japchae Noodles Recipe - Sweet Potato Starch Noodles

    1

    To begin making the Korean Japchae Noodles,bring a pot of water to boil and cook the noodles as per the package instructions. Once done drain the noodles and rinse in cold water. Keep Aside.

    In a pan heat oil, add the onions, garlic and ginger. Saute till the onions turn translucent.

    Once done add carrots, bell peppers, baby corn, spinach leaves and toss until they’re slightly tender.

    After the vegetables are tender add the soy sauce, salt and toss again gently on low flame. Add the cooked noodles mix well to combine and turn off the heat.

    Transfer the Korean Japchae Noodles to a bowl and garnish it with sesame seeds and serve.

    Serve Korean Japchae Noodles along with Sichuan Style Chilli Potato Recipe for a wholesome weekend dinner.
