Mexican Lime Chicken is marinated Chicken breasts in lime juice, lime zest, coriander, paprika and grilled either in oven or stovetop grill pan. Mexican Lime Chicken can be served as a starter or a side dish to lovely weekend meal and also a great option to serve in your brunch parties.

Mexican inspired recipe is simple yet very appetizing. Lime juice and zest when teemed up with coriander and paprika gives an amazing aroma and flavour to the chicken keeping it juicy and soft.

Serve Mexican Lime Chicken along with some Baked Mexican Rice for a perfect weekend dinner.

Ingredients

    4 Chicken breasts, pieces
    5 tablespoons Extra Virgin Olive Oil
    4 tablespoons Lemon juice
    1 teaspoons Lemon zest
    1 tablespoon Garlic
    1 tablespoon Coriander (Dhania) Seeds, crushed
    Salt, to taste
    1 teaspoon Paprika powder
    2 tablespoons Coriander (Dhania) Leaves, chopped

Instructions for Mexican Lime Chicken Recipe

    To begin making the Mexican Lime Chicken recipe, firstly clean, wash the chicken breasts, make 1 inch slits and keep aside.

    In a large mixing bowl, combine olive oil, lime juice, lime zest, garlic paste, coriander seeds, salt to taste, paprika, cilantro.

    Add chicken breasts and marinate for minimum 1 hour in the refrigerator.

    Heat a grill pan on the stove top and add spray/brush some oil.

    Place the marinated chicken on it and grill from both sides till the chicken is cooked soft and juicy.

    Transfer the grilled/roasted chicken on a serving platter and serve with a dash of lime juice all over.

    Serve Mexican Lime Chicken along with some Baked Mexican Rice for a perfect weekend dinner.
