Thoran is a stir fry made with any type of vegetable and coconut in Kerala. Mushroom thoran Recipe or mushroom stir fry in Kerala style is a vegetable dry sabzi made with finely chopped mushrooms. These mushrooms are mixed with a paste made of coconut and shallots to make this recipe. It is then tempered with mustard and cumin seeds and curry leaves. This dish has a mild flavor and is not spicy. We loved having Mushroom Thoran Recipe-Kerala Style Mushroom Sabzi with steamed rice and Cheriya Ulli Sambar.   • 20 Button mushrooms , finely chopped
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 2 tablespoon Oil
  • Salt , to taste
  • Ingredients For Spice Paste
  • 4 tablespoon Fresh coconut , grated
  • 4 Shallots
  • 2 Green Chillies
  • 5 Curry leaves
  • 1/2 teaspoon Cumin seeds (Jeera)
  • Ingredients For Tempering
  • 1 teaspoon Mustard seeds (Rai/ Kadugu)
  • 1 teaspoon Cumin seeds (Jeera)
  • 2 sprig Curry leaves
  • 2 Dry Red Chillies

How to make Mushroom Thoran Recipe-Kerala Style Mushroom Sabzi

  1. To prepare this easy Mushroom thoran Recipe-Kerala Style Mushroom Sabzi, prep up with all the ingredients first.

  2. Grind all the ingredients meant for spice paste into a thick coarse paste by adding 1/3 cup water.

  3. Heat a kadai and add oil. Add mustard seeds and after they splutter, one by one add the other ingredients meant for tempering and mix well.

  4. Add the finely chopped mushrooms and turmeric powder and mix well. After some time water will be released from the mushrooms. Cook it for 10 to 15 minutes till the mushrooms appear tender.

  5. Now add the ground coconut paste to the mushrooms and cook uncovered for 10 minutes.

  6. Add salt to taste and give it a stir. Serve Kerala Style Mushroom thoran Recipe-Kerala Style Mushroom Sabzi with Steamed rice and Cheriya Ulli Sambar.
