Mushroom Thoran Recipe - Kerala Style Mushroom Sabzi

Mushroom Thoran Recipe is a Kerala style dry sabzi made with button mushrooms. Tossed is a lovely spice mix of whole spices like black peppercorns and cumin seeds along with some fresh coconut. Served best with some rasam, steamed rice and a dollop of ghee.

Mushroom Thoran Recipe is a South Indian Kerala style stir fry od button mushrooms tossed in a  freshly ground coconut masala.  The coarse coconut masala apart from coconut contains whole black pepper corns, curry leaves and cumin seeds. 

The addition of finely chopped garlic and green chilies elevate the mushroom thoran to yet another level. So simple yet packed with flavours that shine through this mushroom dish made the Kerala way.

Ingredients

    For the coconut masala
  • 1/4 cup Fresh coconut
  • 1/2 teaspoon Whole Black Pepper Corns
  • 1 sprig Curry leaves
  • 1 teaspoon Cumin seeds (Jeera)
  • 1 tablespoon Oil
  • 1/2 teaspoon Mustard seeds (Rai/ Kadugu)
  • 1/2 teaspoon Cumin seeds (Jeera)
  • 1 Dry Red Chilli
  • 5 Pearl onions (Sambar Onions) , finely chopped
  • 3 cloves Garlic , finely chopped
  • 1 Green Chilli , finely chopped
  • 2 sprig Curry leaves , torn
  • 1/2 teaspoon Turmeric powder (Haldi)
  • Salt , to taste
  • 300 grams Button mushrooms , cut into quarters

How to make Mushroom Thoran Recipe - Kerala Style Mushroom Sabzi

  1. To begin making the Mushroom Thoran Recipe, prep all the ingredients and keep ready.

  2. To grind the coconut masala, in a mixer jar, combine the fresh coconut, peppercorns, curry leaves and cumin seeds. Grind this to a coarse masala without adding any water and set aside. 

  3. To make the mushroom thoran; heat oil over medium flame. Add mustard seeds, cumin seeds, and dry red chilli and allow it to crackle.

  4. Stir in the curry leaves, pearl onions, garlic, green chilli and saute until the onions soften and turn lightly golden.

  5. Next, add in the mushrooms, salt and turmeric. Saute for 2-3 minutes. At this stage add the freshly ground coconut masala and continue to cook the Mushroom Thoran. 

  6. When the mushrooms have cooked through completely, check the salt and adjust to taste accordingly and turn off the heat and serve.
