How to make Nellor Brinjal Fry Recipe
To begin making the Nellor Brinjal Fry Recipe, heat a sauce pan with oil, add chana dal, coriander seeds and mustard seeds. Roast them well for about 10 seconds.
Add dry red chillies, onions and saute till the onions are light brown. You can add grated coconut at this point and turmeric powder and roast well till the coconut has a light brown color.
Switch off the heat, allow it to cool down and grind it along with a little bit of salt to a smooth paste and keep it aside.
Heat the same sauce pan with oil, add cumin seeds and curry leaves and allow it crackle, add brinjals that are sliced, sprinkle some salt and saute them until the brinjals soften and gets cooked.
Once it is cooked you can add the ground paste and adjust the salt levels. Combine the masala well with the brinjal and cook for about 10 minutes and serve.
