Skewed overnight marinated chicken grilled in oven to perfection
Chicken Sekuwa is a popular street food from Nepal. Traditionally it is cooked on an open coal grill but I have used an oven here to make it much more convenient for home cooking. You can prepare in an OTG or a convection oven with rotisserie. Overnight marination and addition of Timur (Himalayan Spice) make this recipe so delicious. And the ease of this recipe is beyond imagination, you just need to throw in all the ingredients together, marinate it overnight and grill it the next day for best results. Making Nepalese Chicken Sekuwa Recipe requires overnight marination for best results so you can plan this dish in advance.
Take chicken breast & chop it into small cubes. Marinate the chicken with yogurt, salt, garam masala powder, turmeric powder, Chopped coriander leaves, black pepper powder, ginger garlic paste,timur, green chillies and lemon juice.
Cover the bowl with a cling wrap and let it marinate in the fridge overnight.
Once the marination is over, chicken is ready for cooking. So preheat your oven at 180 C.
Rub some vegetable oil on the skewers and start putting the chicken cubes on the skewers.And make sure there is some gap between the chicken pieces so that they properly coked.
Grill them for good 15-20 minutes in your oven . Chicken Sekuwa is ready now and if you like to give them a charred look then you can add cook them for few minutes on a grill pan after applying some melted butter on them.
