The summer calls for light and refreshing meals with minimal spices, served along with sides that are cooling for the body. Here is one such lunch box meal that can be packed for both kids school lunch box or even an office lunch box.

A flavoursome Sweet Corn, Methi & Tomato Rice Recipe served along with a healthy Palak Raita,  crunchy roasted papad and a refreshing drink of Mango Shikanji  by the side. A light meal that makes you feel good at the end of it.  

When you pack the Mango Shikanji for an office lunch box, you can add a few ice cubes into it, so it will stay fresh either for a mid morning snack or for an afternoon snack.
