The Kesar Mango Phirni Recipe is a refreshing phirni made from fresh mangoes when they are in season. It makes a great summer party dessert after a delicious indian meal.

Phirni is a traditional Indian rice pudding recipe which is prepared with everyday ingredients like milk, rice and sugar. Kesar Mango Phirni Recipe is traditional phirni with a twist. The added flavors of mango and saffron make the phirni even more tastier.

Ingredients

    4 tablespoons Rice, raw
    4 cups Milk, full fat milk
    3/4 cup Condensed Milk
    1/4 cup Pistachios
    1/4 cup Whole Almonds (Badam)
    1 teaspoon Cardamom Powder (Elaichi)
    4 Saffron strands
    1 cup Mango Pulp (Puree)

Instructions for Kesar Mango Phirni Recipe

    To begin the making the Kesar Mango Phirni Recipe, in a bowl add some rice and soak it in water for half an hour.

    Drain the water and add rice to the blender and make a coarse paste.

    Add one fourth cup water to the rice paste to dilute and set aside.

    In a heavy bottom vessel add milk and bring it to a boil.

    Once the milk has boiled slowly add the rice paste and keep stirring so that no lump is formed.

    This is very crucial step so whisking is highly recommended. Combine with milk and let it simmer till everything has thickened and reduced.

    The milk will acquire porridge like consistency.

    At this stage add condensed milk and cardamom powder. Cook a few minutes more and mix everything well. Turn the flame off and let it come to room temperature. Refrigerate the phirni for at least an hour.

    Add the Mango puree to the phirni and combine well.

    Add saffron strands and slithered almonds and pistachios and combine the Kesar Mango Phirni well.

    You can transfer the Kesar Mango Phirni to individual serving bowls or clay pots and refrigerate further till chill.

    Serve the Kesar Mango Phirni Recipe with additional saffron strands and pistachios as garnishing for dinner parties or festivals.
