Udupi Style Heerekai Bajji Recipe is a delicious Ridge Gourd Fritters Recipe that can be put together in a jiffy.  The bajji is essentially made from ridge gourd which is dunked in spicy besan batter and fried in a kuzhi Paniyaram pan this will make it much healthy than the authentic version of frying in a deep oil.

These Bajjis make the best snack which can be had during those cold winter season or rainy season with a cup of hot chai and bowl of these wonderful cute little ridge crispies.

Serve the Udupi Style Heerekai Bajji Recipe as a tea time snack along with Masala Chai

Ingredients

For the batter

    1 Ridge Gourd (Turai/ Peerkangai), skin peeled and cut into roundels
    1 cup Gram flour (besan)
    2 tablespoon Rice flour
    1 tablespoon Red Chilli powder
    1 teaspoon Turmeric powder (Haldi)
    1/2 teaspoon Baking soda
    Salt, to taste
    Oil, for cooking 

Instructions for Udupi Style Heerekai Bajji Recipe-Ridge Gourd Fritters

    We begin making the Udupi Style Heerekai Bajji Recipe, wash and peel the ridge gourd. Cut them into roundels and set aside. 

To make the bajji batter

    1

    In a mixing bowl, combine besan flour, rice flour, red chilli powder, turmeric powder, baking soda and salt along with 1/3 cup of water. Mix well to a make a smooth batter.

    Heat a kuzhi paniyaram pan, and add a teaspoon of oil in each of the cavities. Dip the ridge gourd roundels in the batter completely and place it in the cavity.

    Cook it till it crisp on either side. Flip it over and continue to cook. Remove and drain it on an absorbent paper.

    Serve the Udupi Style Heerekai Bajji Recipe as a tea time snack along with Masala Chai.
