This Middle Eastern style Roasted Carrot Hummus Falafel Wrap makes a quick weeknight dinner or can also be had as a healthy breakfast. When summers are around and you go on picnics with friends and family, the hummus falafel wrap can be made quickly when you have the ingredients handy.

The falafels are made in a Kuzhi Paniyaram Pan and this way of making falafels uses less oil.

Ingredients

    For Carrot Hummus
  • 3 Carrots (Gajjar) , diced 
  • 1/2 cups Kala Chana (Brown Chickpeas) , cooked (drained from its liquids and keep the liquid as well for later use)
  • 2 Lemon juice
  • 1/4 cup Sesame seeds (Til seeds)
  • 2 cloves Garlic
  • Salt , to taste
  • 1/2 teaspoon Cumin powder (Jeera) , roasted
  • 1 teaspoon Oil
  • 1 Parsley leaves , freshly chopped
  • For Falafel
  • 1 cup Kala Chana (Brown Chickpeas) , cooked
  • 80 grams Rolled Oats Or Instant Oats
  • 2 cloves Garlic , chopped
  • 1 teaspoon Cumin powder (Jeera) , roasted
  • 1 Parsley leaves , chopped (you can also use coriander)
  • Salt and Pepper , to taste
  • For Wrap
  • 6 Whole Wheat Flour Tortilla
  • 20 Falafel
  • 1 Homemade Hummus , (carrot )
  • 2 Tomatoes , thinly sliced
  • 1 Red onion , thinly sliced
  • 1 Avocado , thinly sliced
  • 1/2 cup Iceberg lettuce
  • Tabasco Original - Hot Sauce , for seasoning
  • Salt and Pepper , to taste

How to make Roasted Carrot Hummus Falafel Wrap Recipe

  1. To begin the preparation of Roasted Carrot Hummus Falafel Wrap Recipe, first make the carrot hummus.

  2. For this heat a teaspoon of oil in a pan, add the diced carrots and roast them until cooked through and have a roasted taste.Turn off heat and allow the carrots to cool.

  3. Blend the sesame seeds into a smooth paste, by adding a little water. Add the remaining ingredients into the blender including the roasted carrots and blend to a smooth hummus.

  4. Give it a taste and adjust the seasonings accordingly. Keep aside or refrigerate until ready to use.

  5. Next make the Falafel, for this combine all the falafel ingredients, except the oil and oats in a food processor and blend to make a coarse thick paste.

  6. Add the peppy tomato oats into the falafel batter and divide the falafel batter into small portions of the size of a Ping-Pong ball and flatten them slightly.

  7. Heat a Kuzhi Paniyaram Pan, add 1/2 teaspoon oil into each cavity and place the shaped falafel into the cavities and pan fry them until it is crisp and browned on both sides.

  8. Add few more drops of oil when you flip over to fry them on the other side. This will help in getting the even color for the falafels.

  9. To begin making the Roasted Carrot Hummus Falafel Wrap, we will first have to get all the ingredients ready.

  10. Once you have all the ingredients ready; toss the tomatoes and onions in salt, pepper.

  11. Place the tortilla on a flat surface.

  12. Place the lettuce leaves on the tortillas, next spread some hummus in the center, and add the hot falafel. Next, top it with tomatoes, onions, avocado and Tabasco sauce and fold into a wrap.
