Ingredients

  • 1 cup Quinoa
  • 1 teaspoon Mustard seeds
  • 4 cloves Garlic , finely chopped
  • 1 cup Pearl onions (Sambar Onions) , chopped or 1 regular onions sliced
  • 1 teaspoon Cardamom Powder (Elaichi)
  • 3 Tomatoes , finely chopped
  • 1/2 teaspoon Red chilli powder
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Sambar Powder
  • 1 teaspoon Garam masala powder
  • Salt , to taste
  • Gingelly oil
  • 1 sprig Curry leaves
  • 2 sprig Coriander (Dhania) Leaves , chopped
  • 1 tablespoon Ghee , optional

How to make Tomato Quinoa Recipe - With A South Indian Twist

  1. To begin making the South Indian Style Tomato Quinoa Recipe, prep all the ingredients and keep it ready.

  2. Heat a pressure cooker with oil over a medium heat; add in the mustard seeds and allow it to crackle.

  3. Once the mustard seeds crackle, stir in the garlic and onions and saute until it has softened.

  4. Add the curry leaves, tomatoes and saute until the tomatoes become soft and mushy.

  5. Once the tomatoes become soft and mushy, stir in the cardamom, turmeric powder, garam masala powder and sambar powder and mix well. Add 1 cup of quinoa into the pressure cooker and 2 cups of water.

  6. Pressure cook the Tomato Quinoa for about 4 to 6 whistles and turn off the heat. Allow the pressure to release naturally from the Tomato Quinoa.

  7. Once the pressure has released, stir in chopped coriander leaves and optionally ghee. Transfer the Tomato Quinoa to a serving bowl and serve hot.
