Spicy Avocado Scrambled Eggs Recipe

You can adjust the ingredients according to your taste or availability. You can also add in some coloured peppers if you fancy. Serve the spicy scramble for breakfast, topped with a crisped slice of bread or wrapped in a Roti/Tortilla for a light meal. - 1 Avocado , ripe, chopped
- 4 Whole Eggs , whisked
- 2-3 tablespoon Milk
- 2 Green Chillies , chopped
- 1/2 teaspoon Black pepper powder , optional
- 1 teaspoon Cumin powder (Jeera)
- 1 Onion , chopped
- 1 teaspoon Dried oregano
- 2 cloves Garlic , finely minced
- Coriander (Dhania) Leaves , chopped for garnishing
- 1 tablespoon Cooking oil
- Salt , to taste
How to make Spicy Avocado Scrambled Eggs Recipe
To begin making the Spicy Avocado Scrambled Eggs, first, add the milk and salt to the eggs and whisk.
Heat the oil in a pan.
Add the chopped onion and garlic and sauté them for a few seconds.
Add chillies, cumin powder and mix.
Stir in the eggs and whisk while cooking on low flame.
Sprinkle the pepper powder and oregano and mix.
When the eggs just start setting, stir in the Avocado.
Mix and cook for a few seconds and take off the heat.
Garnish with chopped coriander leaves and serve immediately.
