- 90 grams Butter (unsalted)
- 100 grams Brown Sugar (Demerara Sugar)
- 2 Whole Eggs , lightly beaten
- 1 teaspoon Vanilla Extract

How to make Sticky Date (Fig) & Walnut Pudding Recipe with Toffee Sauce
We begin making the Serve the Sticky Date (Fig) & Walnut Pudding Recipe with Toffee Sauce by preheating the oven to 180C and grease a muffin pan with butter and keep aside.Soak the milk and dates/figs together in a bowl, until soft. Keep aside to cool.
Into a large bowl or the bowl of the stand mixer; add the softened butter, brown sugar, the two eggs, and a teaspoon of vanilla essence. Beat together all the ingredients until well combined. For the toffee sauce, place the sugar and melted butter in a saucepan and keep stirring continuously until the sugar is dissolved. Let the mixture bubble for a couple of minutes before adding the cream. Cook for about 5 to 10 minutes or until the sauce is thick, sticky and glossy on medium heat. As soon as you notice the sauce is thickening, turn off the heat.
Place the muffins in a dessert platter, pour the toffee sauce over it and serve it along with vanilla ice cream.
