  • 90 grams Butter (Unsalted)
  • 100 grams Brown Sugar (Demerara Sugar)
  • 2 Whole Eggs , lightly beaten
  • 1 teaspoon Vanilla Extract
  • 1 1/2 teaspoons Baking powder
  • 175 grams All Purpose Flour (Maida)
  • 50 grams Cocoa Powder
  • 100 ml Milk , warm
  • 175 grams Dried Figs , or dates, chopped
  • 3/4 cup Walnuts , roughly chopped
  • Ingredients for Toffee Sauce
  • 125 grams Butter (Unsalted)
  • 175 grams Brown Sugar (Demerara Sugar)
  • 125 ml Fresh cream

How to make Sticky Date (Fig) & Walnut Pudding Recipe with Toffee Sauce

  1. We begin making the Serve the Sticky Date (Fig) & Walnut Pudding Recipe with Toffee Sauce by preheating the oven to 180C and grease a muffin pan with butter and keep aside.Soak the milk and dates/figs together in a bowl, until soft. Keep aside to cool.

  2. Into a large bowl or the bowl of the stand mixer; add the softened butter, brown sugar, the two eggs, and a teaspoon of vanilla essence. Beat together all the ingredients until well combined. Once combined, add the flour, the baking powder, cocoa powder and the milk date/fig mixture, walnuts in that order. Beat until you notice the batter is well combined and glossy.

  3. Spoon the Date/Fig Pudding batter into the muffin cavities and bake in the preheated oven until you notice the top is set or until a tester when inserted into the center comes almost clean.

  4. While the Date/Fig Pudding is getting baked, we will prepare the toffee sauce.

  5. For the toffee sauce, place the sugar and melted butter in a saucepan and keep stirring continuously until the sugar is dissolved. Let the mixture bubble for a couple of minutes before adding the cream. Cook for about 5 to 10 minutes or until the sauce is thick, sticky and glossy on medium heat. As soon as you notice the sauce is thickening, turn off the heat.

  6. Place the muffins in a dessert platter, pour the toffee sauce over it and serve it along with vanilla ice cream.
