  • 2 Yellow Zucchini
  • 2 cloves Garlic , finely chopped
  • 1 Red Bell pepper (Capsicum) , finely chopped
  • 1 cup Button mushrooms , finely chopped
  • 3 sprigs Parsley leaves , finely chopped
  • 1/2 cup Del Monte Cheesy Dip
  • Salt , to taste
  • Whole Black Peppercorns , coarsely pounded
  • Red Chilli flakes , to taste
  • 1 teaspoon Red Chilli sauce
  • 1/4 cup Whole Wheat Bread crumbs
  • 1/4 cup Cheddar cheese , grated
  • 1 tablespoon Extra Virgin Olive Oil

How to make Stuffed Zucchini Recipe With Roasted Peppers & Mushrooms Made With Cheesy Dip

  1. To begin making the Stuffed Zucchini Recipe With Roasted Peppers & Mushrooms Made With Cheesy Dip, first prep all ingredients and keep them handy. Preheat the oven to 180C.

  2. Trim the ends of the zucchini. Slice the zucchini into two halves horizontally. Slice of a very small portion from the skin part so that the zucchini can rest on the platform, with pulp facing up.

  3. Scoop out half the pulp from the zucchini using a knife and melon baller. Keep the Zucchini boats aside and place the pulp of the zucchini on the chopped board. Chop the zucchini pulp into finely pieces.
