A simple comforting Ayurvedic meal of our humble Whole Wheat Phulka served with Turia Muthia Nu Shaak, and Sukha Kala Chana with some refreshing Buttermilk is meal all of us would love to come home to. A very simple meal that is very nutritious and easy to make. 

A wholesome meal packed with nutrients, textures and flavours. The essence of our Indian meal, is usually a carbohydrate like that of rice or roti, served with a gravy sabzi and many a times a dry sabzi too, with a side of a salad or a drink, that's most often chaas or buttermilk as we all know. 

This meal here, includes a Gujarati Shaak, which essentially is a gravy sabzi, this one is Turia Muthia Nu Shaak which is made using ridge gourd or turiya combined with muthiyas made with methi leaves. Nutrients of both turiya and methi packed in one dish. 

Ridge Gourd has many nutritional benefits as it is loaded with fibers, vitamins, and minerals. From an Ayurvedic point of view, ridge gourd increases vata and kapha, but it cools down and pacifies the dosha pitta in the body. Known to be an effective blood purifier, it boosts liver health too. Also very low in saturated fat and cholesterol, it is an ideal vegetable to include in a diet for those who are looking for weight loss.

This dish doesn't use garlic or onions or even red chilli for that matter to keep up to the norms of the ayurvedic style of cooking. 

Along with this shaak, is a rather simple sabzi, Sukha Kala Chana which is a boiled kala chana tossed with spices and served as part of this delicious meal. 

Not to forget the refreshing part of the meal being the Masala Chaas. Chaas is very helpful in Summers, as it hydrates your body and also saves you from the scorching heat. You can also serve a bowl of Plain Curd with this meal. To complete the meal, we have served a Phulka.
