Ingredients

  • 1 cup Homemade tomato puree
  • 1 Onion , finely chopped
  • 1 Green Bell Pepper (Capsicum) , finely chopped
  • 2 Pickled Jalapenos , finely chopped
  • 200 grams Button mushrooms , finely chopped
  • 1 Carrot (Gajjar) , finely chopped
  • 1 cup Rajma (Large Kidney Beans) , boiled
  • 2 cloves Garlic , finely chopped
  • 1 Bay leaf (tej patta)
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Cumin powder (Jeera)
  • 2 cups Basmati rice
  • Salt , to taste
  • Extra Virgin Olive Oil , for cooking
  • 2 teaspoons Lemon juice
  • Coriander (Dhania) Leaves , finely chopped
  • 1/2 cup Cheddar cheese , grated

How to make Vegetarian Smoked Mexican Bean Rice Recipe

  1. To begin making the Vegetarian Smoked Mexican Bean Rice Recipe, in a large saucepan, heat oil over medium heat. Add the rice, onion, peppers,carrots, beans, bay leaf, jalapenos and garlic.

  2. Saute until the rice is browned and vegetables are tender.

  3. Stir in the water, tomatoes, chili powder, cumin powder and salt and bring to a boil. 

  4. Turn the heat to low and simmer the rice mixture covered with a light fitting lid until the rice is cooked, about 15 to 20 minutes.

  5. You will notice rice fluffy with the water fully absorbed. Turn off the heat at this stage and allow the rice to sit for 10 minutes.

  6. After 10 minutes stir in the cheese, coriander and lemon juice with a fork taking care not to make the Mexican rice mushy and broken. Transfer the Mexican rice to a serving bowl and serve hot.
