  • 1-1/2 cups Whole Wheat Flour
  • 1/2 cup Sugar
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1 teaspoon Cinnamon Powder (Dalchini)
  • 1 cup Apple puree , (deskinned and ground to paste)
  • 1 Apple , peeled, cored and diced small
  • 1/4 cup Curd (Dahi / Yogurt)
  • 1/2 cup Canola Oil , or vegetable oil
  • For Flax Meal Egg Replacer
  • 2 tablespoons Flax seed powder (flax meal)
  • 6 tablespoons Chilled water

How to make Eggless Whole Wheat Apple Muffins Recipe-Vegan Options

  1. To begin making the Whole wheat Apple muffin Recipe, preheat the oven to 180 C. Arrange the muffin molds with paper liners or grease the molds. 

To make the Flax Meal Egg Replacer 
  1. If your recipe asks for 2 eggs, measure 2 tablespoons of flax meal along with 6 tablespoons of water. Stir well and let the mixture rest for about 15 minutes. This process of resting helps the flax meal mixture develop a gelatinous consistency similar to eggs.

To make the Batter 
  1. Sift the wheat flour, baking powder, salt and cinnamon powder in a bowl and keep aside.

  2. Using a stand mixer or a hand beater; whisk the eggs (flaxmeal egg replacer) and oil together. Gradually beat in the apple puree, sugar and milk.

  3. Once well combined, gradually add the flour mixture a little at a time and beat until all of the ingredients have come together.  Finally fold in the chopped apples. 

  4. Spoon the muffin batter half way through into the prepared muffin molds.

  5. Bake them for 12 to 15 minutes in a preheated oven or until toothpick inserted in the middle of a muffin comes out clean.

  6. Remove the Whole Wheat Apple Muffins from oven and allow it to cook in the molds for 10 minutes and later remove them to wire rack for cooling.
