Baked Mexican Rice is a one pot dish which is made with the combination of mexican flavoured rice, mexican chili which is rajma and cheese. A great way to include these healthy red kidney beans into your family's diet.

Baked Mexican Rice is a one pot dish which is made with the combination of mexican flavours. 

Here the cooked rice is layered with a mixture of rajma that is cooked along with some onions and garlic and seasoned with some simple spices salt, oregano, red chilli flakes, pepper powder. 

These alternate layers of rice and rajma are finished of with a generous layer of cheese with some crunchy bell peppers and sweet corn. 

Serve Baked Mexican Rice with Indian Style Fajitas and Spinach Enchilada for a weekend night party with your friends and family.

Ingredients

    For the rice
  • 1-1/2 cup Cooked rice
  • 1 Onion , finely chopped
  • 1 teaspoon Red Chilli flakes
  • 1 cup Mixed vegetables , boiled
  • 1/2 cup Rajma (Large Kidney Beans) , boiled
  • 2 tablespoons Cooking oil
  • Salt , to taste
  • Black pepper powder , to taste
  • 1 teaspoon Ginger Garlic Paste
  • For the topping
  • 3 Tomatoes , chopped
  • 1 Onion , finely chopped
  • 2 cloves Garlic , finely chopped
  • 1/2 teaspoon Dried oregano
  • 1/2 teaspoon Red Chilli flakes
  • 1/2 teaspoon Sugar
  • 1 tablespoon Cooking oil
  • Salt , to taste
  • Black pepper powder , to taste
  • 2 tablespoons Tomato Ketchup
  • 1/2 cup Sweet corn , steamed
  • 1/2 Green Bell Pepper (Capsicum) , finely chopped
  • Tomato , as required to garnish
  • Black olives , as required to garnish
  • 4 tablespoons Mozzarella cheese , grated

How to make Baked Mexican Rice Recipe

  1. To begin with the Baked Mexican Rice, we will firstly prepare the rice. Heat the oil in a wide pan on medium flame and fry the onions till they turn soft and translucent. This will take about a minute or so. 

  2. Add the ginger garlic paste and fry again for another minute. Next, add the chili flakes, boiled rajma and cooked vegetables and fry for 2 minutes.

  3. Add rice with salt and pepper and mix thoroughly.

  4. The next step is to make the topping.

  5. Heat oil in a wide pan on medium flame and fry the onion for 2 minutes.

  6. Add garlic and fry again for a few seconds. Add the tomatoes, chilli flakes, oregano sugar, salt and pepper and cook until soft. 

  7. Blend in a mixer and do not strain. Mix it with the tomato ketchup.

  8. Next, to assemble the rice and the topping, spread the hot rice in a greased baking dish.

  9. Cover with the tomato gravy and sprinkle grated cheese boiled corn kernels, capsicum on top. Garnish with tomatoes and olives.

  10. Bake the dish in an oven at 150 degree Celsius for about 7-8 minutes. After 7-8 minutes, take the dish out and it is ready to be served.
