Dabeli is India’s answer to the western burger that is popularly sold on the highways of Gujarat. The buns are spiked with a sweet and spicy potato mixture topped with onion, pomegranate, and fresh Lehsun Chutney and Sev. The best Dabeli I have eaten is at Karnavati Dabeli in Ahmedabad which is one of the oldest places selling these delicious dish. If ever you happen to visit Gujarat this is surely a place that you must eat at.

Serve the Dabeli as a tea time snack or for a chaat party when you have some friends and family over. It also makes a great weeknight dinner too.

    Ingredients for the Dabeli
  • 8 Pav buns
  • 1 Onion , finely chopped
  • 1/4 cup Lahsun Ki Chutney (Red Garlic Chutney)
  • 1/2 cup Sev
  • 1/2 cup Anardana (Dry Pomegranate Seeds)
  • 2 sprig Coriander (Dhania) Leaves , chopped
  • Ingredients for Dabeli Filling
  • 4 Potatoes (Aloo) , boiled and mashed
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Coriander (Dhania) Seeds , roasted and powdered
  • 1/4 teaspoon Cinnamon Powder (Dalchini)
  • 1/4 teaspoon Cumin (Jeera) seeds , roasted and powdered
  • 1/4 teaspoon Asafoetida (hing)
  • 2 tablespoons Sweet Chutney (Date & Tamarind)
  • 2 tablespoons Cooking oil
  • Salt , to taste

How to make Dabeli Recipe (Pav Buns with Spicy Mashed Potatoes, Pomegranates & Sev)

  1. To begin making the Dabeli Recipe, first get all the ingredients prepped and ready. 

  2. Boil the potatoes in the pressure cooker, peel and mash them and keep aside. Prepare the Date Tamarind Chutney and Garlic Chutney, keep aside.

  3. The next step is to make the Dabeli Masala.

  4. Heat oil in a skillet pan on medium heat; stir in all the Dabeli filling ingredients and sauté for a few of minutes until well combined. Keep aside. Check the salt and spices and adjust to suit your taste.

  5. Slice the pav-buns into half horizontally. Spread butter and toast them on the pan on both sides, until the surface is lightly golden and crisp. Turn off heat and take pav buns off the pan and place on a platter.

  6. Spread a large dollop of the dabeli filling on the lower half of the buns; sprinkle the chopped onion, coriander leaves, Sev, and pomegranate on top of the filling.

  7. Smear the Garlic Chutney on the top half of the bun. Place this top half of the bun on the lower filled half and serve.

  8. Serve the delicious Dabeli over a cup of Masala chai or make it as one of the main dishes for your parties.
