- 12 Dates , deseeded, soaked in warm water for 10-15 minutes
- 1/4 cup Caster Sugar
- 1/4 cup Olive Oil
- 1/2 cup Milk
- 3 tablespoons Curd (Dahi / Yogurt)
- 1 teaspoon Vanilla Extract
How to make Eggless Banana and Date Loaf Recipe
To begin making the Banana and Date Loaf Recipe, first set your oven to preheat at 180° C and prepare your loaf pan by buttering and flouring it well.
In a medium-sized mixing bowl, sift together the flour, baking powder and baking soda
In a small blender jar, puree the bananas, sugar and dates together
Transfer the puree banana and dates into a large mixing bowl. Add the oil, milk, yogurt and vanilla extract and whisk until just mixed to a smooth and creamy consistency. You can also use a hand blender to ease the process of mixing or use a spatula.
Add the flour mixture in batches, gently folding the batter with a spatula, till all the flour is incorporated into the cake batter and no streaks of flour remain.
Pour the Banana date cake batter into prepared loaf pan and bake for 30-40 minutes or until the cake is golden brown, well risen and a toothpick inserted in the centre comes out clean.
