This weeks Kids Lunch Box is designed with a few recipes that are good for summer. Some simple light, tasty and easy recipes are included which your kids will enjoy and at the same time get all the nutrition that they require.

The weather is getting hotter day by day, as the Winter is ending and Summer is approaching. On top of the heat, most kids are going to write there exams as well. So this is the time when they need all the nutrition and energy required to cope with the exam pressure and also beat the summer heat. 

Thayir Sadam or curd rice is one of the simplest recipes to make and most kids really enjoy it. Curd is cooling and also full of nutrition. It also helps to release anxiety and stress. Include curd based recipes and buttermilk for boosting your kids immunity.

Lauki Tamatar Sabzi is also a light and super nutritious sabzi recipe which you can pack with any Indian bread of your choice. 90 percent of bottle gourd is water and it is also a great source of vitamins C, B and D, calcium, sodium, magnesium, phosphorous, folate, iron and potassium.

Penne Pasta in Cauliflower Sauce & Watermelon Salad

Penne Pasta in Creamy Cauliflower Sauce is a tasty and nutritious pasta recipe which your kids will surely enjoy. Walnuts are great for brain and it also adds a crunch in the pasta. Some prep work that you can do is make the pasta the night before and keep it in an airtight container in the fridge. You can even make the sauce for the pasta. when packing pasta into your kids lunch box make sure you make the pasta with extra sauce as pasta tends to dry up over time.

Lauki Tamatar Sabzi & Phulka

A simple, quick and yummy one pot sabzi recipe Lauki Tamatar goes best with a phulka. Bottle Gourd is a vegetable high on water (about 92%) and is a rich source of vitamin C, K and calcium. It is really good for your kids and easy to make and pack into the lunch box. You can dice the bottle gourd and keep it in an airtight container in the fridge the previous night.

Curd Rice & Lemon Pickle

Curd rice is loved my most kids and during summers kids really enjoy curd rice in their lunch boxes. You can grate some carrots and add to this recipe if you like. Pomegranate adds a nice freshness and crunch to this dish.Pack it with lemon pickle and some fryums if you like.

Grilled Tofu Sandwich & Apple Cucumber Salad

Super tasty and simple to assemble Grilled Tofu Spinach Sandwich. You can marinate the tofu the night before and keep it refrigerated. Pick and keep the spinach leaves or ice berg lettuce which ever you are using the previous night. Simply grill the tofu and assemble the sandwich in the mornings.

Stuffed Paratha & Kacche Aam Ki Launji

A delicious stuffed paratha full of goodness of carrots and sweet potatoes. Spices added to the filling makes these parathas hard to resist. Serve with Aam ki launji or home made curd of your choice.
