No Bake Eggless Mango Cheesecake Recipe is a creamy mascarpone flavoured with fresh seasonal mango puree which is layered with crumbled buttery biscuit. A mango lovers paradise that you just can't get enough of.
Mango Cheesecake is one of the simplest of the desserts to make for the summer parties.
This cheesecake is rich, creamy and full of flavours from the fresh fruit of the mango. It is eggless and there is no use of flours or even thickeners.
The crust used digestive biscuits and I used the same, except that in very little quantity to give the crunch.
If you wish to make it healthier the mascarpone cheese can be substituted with greek yogurt or hung yogurt.

Ingredients for Biscuit Crust
- 1 1/2 cups Digestive biscuit , or marie crushed
- 1/4 cup Salted butter , melted Ingredients for Cheesecake Filling
- 400 grams Mascarpone Cheese
- 1/2 cup Caster Sugar
- 2 cups Mango (Ripe) , freshly pureed Ingredients for Topping
- 1 Mango (Ripe) , cut and pureed for topping
How to make No Bake Eggless Mango Cheesecake Recipe
To begin making the No Bake Eggless Mango Cheesecake Recipe, we will first combine the biscuit crumbs and the butter in a large bowl. Pour into a pie crust pan or springform pan and press the biscuit crust down to the bottom of the pan. Cover with plastic wrap and place in the freezer to chill while you make the filling.
In the bowl of your electric mixer or with a hand mixer, beat the cheese and sugar until smooth. Add in the mango puree and beat until just combined. Don't over beat, it will curdle the cheese.
Pour the filling over the chilled crust. Spread evenly until the top is looks smooth.
Cover with a foil or a wrap and refrigerate for at least 4 hours or overnight.
Top it with a fresh mango puree and cut into wedges and serve.
