Ingredients

    10 Whole Wheat Brown Bread, (whole wheat)
    1 Onion, roughly chopped
    1 Red Bell pepper (Capsicum), thinly sliced  
    1 Green zucchini, thinly sliced into rounds
    10 Black olives, halved
    1/4 cup Sun Dried Tomatoes, cut into strips
    1/4 cup Goat Cheese
    4-5 Basil leaves
    1 teaspoon Tabasco Original - Hot Sauce, (hot pepper sauce) (optional)
    Salt and Pepper, to taste
    1 teaspoon Za'atar
    2 tablespoon Extra Virgin Olive Oil

Instructions for Grilled Vegetable Sandwich Recipe With Herb Goat Cheese

    To begin making the Grilled Vegetable Sandwich Recipe, In a food processor blend the goat cheese, hot pepper sauce, salt, pepper and basil leaves. Transfer to a bowl and set aside.

    Heat oil in a skillet, add the onions, red peppers and saute them on medium high heat until tender and roasted. Turn the heat to high and add the zucchini slices and saute on high heat until the zucchini is slightly tender.

    Stir in the sun-dried tomatoes and olives, stir to combine and turn off the heat. Set aside.

    Spread the goat cheese mixture on the bottom half of the bread slice and top with the roasted vegetables.

    Sprinkle some Za'atar powder on top and cover with the other half of the bread slice or baguette. Gently press the sandwich with your palm.

Note:

You could choose to grill the baguette with the filling inside on the stove top grill. Do this without the lettuce. Once grilled you can fill with lettuce and serve.

You could also roast the vegetables and refrigerate it. Once you are ready to make the sandwiches assemble filling into the baguette slices and serve cold.
