Kheer is a quintessential Indian dessert for any special occasion, be it during the festivals or any special day. Every region and house hold has its own version. One of the popular kheer varieties, is this Phool Makhana Kheer in the Northern part of India.

Makhana or fox nuts or puffed lotus seeds are highly nutritious nuts, having high contents of fibre, proteins and minerals. The fox nuts are fire roasted and puffed, can be used as a healthy alternative snack to popcorns.

Phool Makhana Kheer Recipe is a popular recipe from the North India, prepared mainly during the festivals, since makhanas can also be consumed by those observing fasts. Traditional Phool Makhana Kheer recipe uses sugar as a sweetener, however here we have replaced it with organic jaggery to make it even more healthier. This recipe uses very little ghee, as compared to the traditional kheer, making it a perfect dessert to be consumed even by those with high cholesterol or diabetes. It is easy to prepare with very few ingredients.

The roasted makhanas are simmered in milk, sweetened with jaggery and garnished with nuts and dried rose petals making it creamy, nutty and a guilt free dessert option. Jaggery also adds a perfect colour and sweetness to the kheer.

Ingredients

    1 liter Milk
    1-1/4 cups Lotus Seeds
    1/2 cup Jaggery, powdered
    3 tablespoons Whole Almonds (Badam), slivered
    2 tablespoons Pistachios, slivered
    1 teaspoon Cardamom Powder (Elaichi)
    2 teaspoons Dried rose petals, for garnish
    1 tablespoon Ghee

    To begin making Phool Makhana Kheer Recipe, we will firstly roast the makhanas.

    Heat ghee in a heavy bottomed pan, add the makhanas and slow roast it till it turns golden and crisp. Keep it aside.

    Now, save a hand full of this roasted makhanas and pound the rest roughly using mortar and pestle.

    Pour milk into a heavy bottomed pan, bring it to a boil on medium heat. Boil the milk for 10 more minutes, till it becomes a little thicker.

    Now, add the pounded and whole roasted makhana's and mix well. Simmer this mixture for 5 minutes, till it becomes creamy and soft.

    After 5 minutes, add in the powdered jaggery, cardamom powder, mix well and simmer till the jaggery is melted and well incorporated into the kheer.
