Tender Coconut Ice Cream Recipe
Coconut used in its entirety and whipped into an ice cream for a delicious treat during a mid day dinner
Coconut is easily available in all cities and town across India. Especially in the summer season, bring in a couple of extra coconuts to whip up this delicious ice cream. This eggless coconut ice cream can be prepared using fresh tender coconut. No churning or ice cream maker is required to prepare it.

Directions for Tender Coconut Ice Cream Recipe
To begin making the Tender Coconut Ice Cream recipe, in a grinder or blender, grind tender coconut meat along with tender coconut water to puree. Keep it aside.
Chop the extra tender coconut into small chunks for mixing in the ice cream later. In a big mixing bowl, beat whipping cream on high using electric beater.
Beat till you get nice and stiff peaks. Add in sugar and beat for few seconds. Add condensed milk and again beat for few seconds.
Now add the prepared puree into this mixture and mix with spatula until well combined. Drop in chopped chunks of tender coconut into this cream and mix.
Your ice cream is all ready now. Pour this ice cream in a freezer safe bowl and freeze it for minimum 5-6 hours.
Remove the bowl out, scoop it into the serving bowl. Drizzle some honey over it and a few ice cream cone pieces and enjoy.
