The chicken is slowly stewed in the tomato puree that has got the flavour of sautéed onions and garlic. We have also added some chopped carrot in order to give another texture to the curry. Finally, the curry is infused with some torn fresh basil that goes really well with the chicken and tomatoes.

  • 1 Chicken breasts , cut into chunks
  • 2 Carrot (Gajjar) , cut diagonally  
  • 1 Onion , chopped
  • 4 cloves Garlic , chopped
  • 1 cup Homemade tomato puree
  • 6 Basil leaves
  • 1 tablespoon Rosemary
  • 1 tablespoon Dried Thyme Leaves
  • 2 tablespoon Paprika powder
  • 1 teaspoon Cumin powder (Jeera)
  • 1 teaspoon Sugar
  • Salt , to taste
  • Extra Virgin Olive Oil , for cooking

How to make Tomato Basil Chicken Curry Recipe

  1. To begin making the Tomato Basil Chicken Curry Recipe, heat olive oil over medium heat in a saucepan.

  2. Add chopped garlic and onions and saute them as well till the onions turn translucent.

  3. Once done add the chopped carrot, sprinkle some salt and toss well. This will help to cook the vegetable faster.

  4. Once the carrot is half cooked, add in the chicken pieces and give it a mix. Saute for about a couple of minutes just to sear the meat. Do not cook for a longer time as the chicken will dry out soon.

  5. Add tomato puree, dried seasonings like dried rosemary, thyme, cumin powder and paprika powder and mix well to combine.

  6. Once the seasonings have mixed well, add salt to taste and a teaspoon of sugar to cut the sharp tanginess.

  7. Add 1 cup of water and give it a stir and bring to a brisk boil. Turn down the heat and let the Tomato Basil Chicken Curry stew for 15 minutes until the chicken and carrots are done.
