The Cheese Stuffed Aloo Bonda Recipe is a twist to the traditional Aloo Bonda recipe. Aloo Bonda is a very traditional South Indian tea time evening snack, that is made most often during festivals and special occasions. This delicious snack is usually deep fried, but in this recipe, we have used a Kuzhi Paniyaram Pan, the taste is absolutely the same as the deep fried ones. Serve the Cheese Stuffed Aloo Bonda along with a spicy Coconut Chutney along with a cup of steaming coffee.

Ingredients

  • 4 Potatoes (Aloo) , boiled and mashed 
  • 50 grams Mozzarella cheese , cut into 1/2 inch pieces
  • 1 teaspoon Mustard seeds
  • 1 inch Ginger , grated 
  • 1 Onion , finely chopped 
  • 2 Green Chillies , chopped 
  • 1/4 teaspoon Asafoetida (hing)
  • 1/2 teaspoon Turmeric powder (Haldi)
  • Coriander (Dhania) Leaves , small bunch, chopped 
  • Cooking oil , as needed
  • Ingredients for bonda batter 
  • 1 cup Gram flour (besan)
  • 1 teaspoon Turmeric powder (Haldi)
  • Salt , to taste

How to make Cheese Stuffed Aloo Bonda Recipe

  1. To begin making the Cheese Stuffed Aloo Bonda Recipe, combine all batter ingredients in a wide mouth bowl. Add a little water at a time to make batter thick enough to thickly coat back of a spoon. Make sure to whisk the batter well until light and fluffy. Keep aside.

  2. Heat oil in a frying pan, add mustard seeds and allow it to crackle. Stir in the onions and sauté for a couple of minutes till onions are soft and light golden in colour.

  3. Add ginger, green chillies, asafoetida, turmeric and salt and sauté for a few more minutes.

  4. Finally stir in the mashed potatoes and sauté for a couple of minutes.

  5. Allow the potato mixture to cool down, stir in the coriander leaves divide it into 8 portions. While shaping, flatten the potatoes in the palm of your hand , place a piece of the Mozzarella cheese in the center and cover it to make a ball. Shape the bonda into round balls and keep aside.

  6. Preheat a kuzhi paniyaram pan. Add a few drops of oil into each cavity.

  7. Dip and coat each of the potato cheese oats balls in the gram flour batter and gradually let it into the cavity. Cover the pan and allow the bonda to steam. Once you notice the batter is cooked, uncover the pan and cook it in the open on all sides by flipping and turning.

  8. Once the Cheese Stuffed Aloo Bonda gets a golden color, remove from the pan and proceed the similar way with the remaining batter.

  9. Serve the Cheese Stuffed Aloo Bonda along with a spicy Coconut Chutney along with a cup of steaming coffee.
