Loaded Breakfast Burrito With Crispy Bacon & Sausage is a fully loaded Mexican burrito that is made to serve for breakfast as the name suggests. The tortillas are stuffed with creamy scrambled eggs, protein rich chicken sausages, crispy crunchy bacon, a fresh onion-tomato salad and not to miss the mild cheddar cheese, all of which make this super healthy burrito. 

Although this holds good for breakfast, you could also serve it for dinner or it makes a great Sunday brunch as well. 

You can either use store bought tortillas or use our recipes to make the homemade ones with corn meal or whole wheat flour.

Ingredients

  • 4 Tortillas
  • 8 Chicken sausage
  • 1/2 cup Cheddar cheese
  • 8 Bacon , strips
  • For the scrambled eggs
  • 6 Whole Eggs
  • 1 tablespoon Butter
  • 2 tablespoons Milk
  • For the salad
  • 2 Tomato , deseeded & thinly sliced
  • 2 Onions , thinly sliced
  • 3 Pickled Jalapenos , sliced
  • 4 sprig Coriander (Dhania) Leaves , finely chopped
  • Salt , to taste
  • 1 tablespoon Veeba Chilli Oregano sauce
  • 1 teaspoon Lemon juice , freshly squeezed

How to make Loaded Breakfast Burrito With Crispy Bacon & Sausage

  1. To begin making the Loaded Breakfast Burrito With Crispy Bacon & Sausage, we will first make the salad. 

To make the salad
  1. In a mixing bowl, combine the onions, tomatoes, coriander leaves, and jalapenos. 

  2. To make the dressing, in a small mixing bowl, combine the chili oregano sauce, salt and lemon juice. 

  3. Just before assembling the Loaded Breakfast Burrito, toss in the salad with the dressing. 

To make the Scrambled Eggs 
  1. In a mixing bowl, break each of the 6 eggs, add in the salt, pepper and milk and mix vigorously making sure the yolks are evenly mixed.  

  2. Preheat a shallow frying pan for 10 to 15 seconds, add butter and pour in the egg mixture. 

  3. Gently mix the egg mixture, until the eggs are cooked. This will take about 2 minutes. You need the scrambled eggs to be soft, so turn the heat off as soon as you see the egg scrambling, as the eggs will continue to cook in the heat. 

  4. Turn off the flame, transfer the scrambled eggs to a bowl and set aside. 

To cook the bacon 
  1. Heat a non stick pan on medium-high heat, and gently place the bacon strips. 

  2. As the bacon cooks, it will release its fat into the pan. Flip and cook until the bacon turns into a deep brown colour. 

  3. Remove the cooked bacon strips on an absorbent paper to drain off all the excess fat. Set aside. 

To cook the sausages 
  1. Heat a non stick pan on medium-high heat, grease the pan with some oil, place the thawed sausages and stir fry until fully cooked. This will take about 2-4 minutes. 

  2. Once cooked, remove from the flame and set aside. 

To assemble the Loaded Breakfast Burrito With Crispy Bacon & Sausage
  1. Toss the dressing to the salad and mix well.

  2. You can choose to either make Corn Tortillas by following the Homemade Corn Tortilla Recipe or make whole wheat tortillas by following Homemade Whole Wheat Flour Tortillas Recipe

  3. Lightly roast the tortillas on a hot skillet on both sides either as it is or along with butter/ oil and place it in a plate. 

  4. Start filling the tortilla by adding the scrambled eggs, cut sausages, bacon, freshly made salad and grated cheese. 

  5. Carefully wrap the burrito, cut into half and serve.
