Meghalaya Style Do O Kalai Recipe is a lip smacking chicken curry that is made along with black lentils. This pahadi chicken curry is great to be made over the weekends or at your next dinner party to be served with some rice.
Do O Kalai Recipe is a simple yet delicious chicken curry from Garo and Khasi mountainous regions of Meghalaya. The cooking here is very healthy using minimal or or not using oil at all. Instead, the chicken skin and fats are used to impart taste to the dish.

- 500 grams Chicken , (Preferably with skin), chopped
- 150 grams Black Urad Dal (Whole) , soaked overnight
- 1 Onion , chopped
- 3 tablespoons Ginger , grated
- 2 tablespoons Garlic , minced
- 3 Green Chillies , chopped (adjust)
- 1 tablespoon Red chilli powder , Red chilly powder( 1 to 2 tbsp)
- 2 teaspoons Lemon juice
- 1/2 teaspoon Cooking soda , or baking soda
- 1 tablespoon Cooking oil
- Salt , to taste
How to make Meghalaya Style Do O Kalai Recipe - Chicken In Black Lentils
To begin making Do O Kalai Recipe soak the black lentils overnight.
Start by grinding the onions, ginger, & garlic together in a small grinder jar, forming a paste, by adding a couple of teaspoons of water only if required. Keep it aside.
Take a pressure cooker and heat a little cooking oil in it. On a medium heat, add the green chillies and saute for a few seconds.
Add onion-ginger-garlic paste and saute continually such that the paste does not get burnt.
Once the raw smell disappears from the onion paste, add in the chopped chicken (You can also keep it to chunky pieces along with bone, if you prefer) and saute till well coated.
Once the chicken is well coated with the paste, add the red chilli powder.
In the oil add the onion paste followed by red chilli powder. Mix it well till the red chilli powder coats evenly to all the chicken.
Add the soaked urad dal lentils and chicken together and mix.
Add salt to taste and cooking soda (only optional).
Now close the lid of the pressure cooker and cook on a low heat for a couple of whistles till the lentils are tender and soft and mushy to form like a gravy and the chicken is cooked as well.
Once you switch off heat, allow the pressure of the cooker to release naturally. Once the pressure is released, remove the lid and add in the lemon juice, and serve
